Filled Cupcakes

Baking for work again.. Golden Vanilla Cupcakes (VCTOW) with a chocolate mousse filling (silken tofu, melted chocolate chips, soymilk, vanilla) and some more of the mousse on top, with some powdered sugar.

I'm a little bummed, I only wanted them to be FILLED with the mousse, but I had so much leftover.. and I didn't know what I was going to put on top anyway. So I just spread more mousse around.. shrug. And then the powdered sugar sort of soaked into it.

It was a valiant effort. I am just having no luck with cupcakes these days. At least I got some baking cups.

Your co-workers are so lucky to get treats like this! Cool vacation photos below. How was your cousin's graduation party?

I love that mousse so much I could eat a bowl of it all by myself. I just made some chocolate cupcakes with mousse and it was piled at least 2 inches high. YUMMM!

Haha I'm glad you all would like the mousse.. I work with a bunch of girls who keep asking me how many calories are in these >.< *gag* Today I brought scones that are about 200 calories each, everyone is excited.. pictures to come!

Vicki - thanks for asking! It was actually fun, we don't see our cousins much and never got along when we were younger, but we're all growing up, we played volleyball on the beach. His parents bought Boca burgers for me and Christine, it was great!

That looks so good. Nice mousse, and there is nothing such as too much of a good thing when it comes to good stuff like this. Pretty with the powdered sugar scattered all over, too. Like snow!
