Maple Walnut for the Trip

Finally, the picture loader is working.

I made a batch of Maple Walnut Cookies from Vive Le Vegan!

Yeah.. I definitely scarfed them all down over the course of the 23-hour drive it took to get here.

And you know what?

THEY WERE DELICIOUS.

Oat Bars and MwM


I forgot to mention, I FINALLY found Vive Le Vegan! at the third Barnes & Noble I went to. Tomorrow night I'm leaving for the pow-wow (I'm Native American on my Dad's side) in Nebraska for a few days, I decided to save myself some money and make my own snacks. They turned out pretty good, I'm feeling like they should be.. peanut buttery. Haha, maybe next time. And once again.. my photography skills are lacking. What can I say, I took it with a cell phone. Now.. my first shot at the MwM!

This morning my sister and I made these beauties. We skipped the Caramel-Maple topping, but I'm pretty sure they still turned out awesome! I'm pleased. :-D

But.. not quite as pleased with my attempt at food photography. Grr..

Bean Mush/Dip/Spread/Stew?

The other day I made a bean.. spread.. dip! I'm not sure what to call it. I just mashed up some black beans with silken tofu, bell peppers, onions, carrots and celery with some black pepper, cayenne and cumin.

I know, I know.. when I get in the kitchen I just mix everything in a bowl and call it a meal. But it was great! My sister made pitas the other day so I ate the bean mixture on that. And tonight I mixed it in with some broccoli, squash and brown rice for a.. mush/stew dish. Haha.

It was all still scrumptious! I'm heading to the bookstore right now, hoping to pick up a copy of Vive le Vegan! by Dreena Burton. I read her blog and the book seems great!

*EDIT* bad news! I went to B&N for the book but it was in vain, I looked at every single book in the Vegetarian Cooking section.. no luck. :-/ I'll have to go somewhere else.

Baked Tofu "Chicken" and College

Yesterday I had a fantastic tofu salad sandwich with my baked tofu "chicken" cutlets. I enjoy cooking.. thus far, I've like everything I've tried. I suppose that won't always be the case but until then.. life is good!

But.. I can't figure out how I'm going to keep cooking for myself once school starts back up.. I'll have to keep buying my own food because they don't have many good options there. What a waste of my meal plan. There is that kitchen on the bottom floor of the dorm though.. I think on Saturdays or Sundays I'll go down and cook things to stock up my fridge for the week. Plans, plans..

Experiments: Whole Grains and Brown Rice

No pictures hoy. Anyway..

I had no idea how much grains expanded when you cook them!! My first experiment the other day involved barley, millet, wheat berries and spelt in the slow cooker overnight. I followed a recipe and woke up to massive amounts of a breakfast cereal similar to oatmeal. It's got vanilla soymilk and cinnamon. At least it tastes good! I will be eating this for days.

Today, another first, I made brown rice. I've heard it tastes bad but.. I liked it just fine. I sauteed some veggies and mixed it all up for dinner. I've been using more and more spices.. it turned out quite spicy, but fantastic I must say.

I remain optimistic!
