Coconut Pancakes!

Continuing the streak.. I made the coconut pancakes from VWaV this morning for the freezer. They only changes I made were using sweetened coconut instead of unsweetened (it's all Mom had in the house) and using one tablespoon of brown rice syrup instead of two of maple syrup (no particular reason for that.. I just want to use up my brown rice syrup..)Pancakes are definitely my favorite freezer food! I pack them in twos, so I can just take them out and microwave them for a quick breakfast. MmMmmm.

Oo those look so yummy! I've frozen pancakes before, but I forgot about that option. I'll have to do this for a quick breakfast during the week. I also pop them in the toaster if they fit to crisp them up a bit

Pancakes are so yummy. They are really good if you have a toaster oven.
