What We've Been Eating

I packed this for lunch the other day. It's pretty simple... cucumber slices and Tofutti cream cheese on toasted 12-grain bread.. with a little pepper. But it was realllly good! This was taken in the sunrise when I made it.. heh.

I don't know what's up with the technicolors in this one.. the flash went off when I didn't want it to. But this is what we had for dinner tonight. It was me, Michelle, Pat, Chris and my little bro Ben (who goes to WCU now, woo!) Bryanna Clark Grogan's "breasts of tofu." I hadn't planned to cook for so many.. so I only had a pound of tofu! So I tried to make up for it in side dishes. We had garlic smashed potatoes, peas and corn, and roasted veggies. I think it turned out pretty well!

And lastly.. I just made these chocolate chip cookies for the bake sale. I'm about to throw them in the freezer until Monday. Ouhp.. Pat just ate two.

why are your potatoes blue and the tofu have blueish specs? it looks like you are shining a UV light on your food.

Ooh, the cucumber sammich is a great idea! I'll have to remember that one.

My photos come out looking funky sometimes; that's why I use my trusty photo editor (I use Picasa). It's kinda cool, though.

I love the lighting in the two top photos. And those cookies look great! So smart to make them ahead and then freeze them. I never would have thought of that, I would be rushing around and staying up all night to bake them fresh. Derr.

Those cookies look so good, what recipe did you use?
I always freeze cookies ahead too when I need them for a certain event. Then I don't have to worry about having to make them if I end up not having time the day before.

Cucumber sandwiches are so good. That's a great example of simple foods being some of the tastiest things around.

What a gerat sandwich idea. I'll have to remember that one.

I'ev been to Mantra--it's 2 blocks from my office. They have vegan options, but I don;t think the food is particularly good.

I'm not going to lie - this food looks fabulous! (Also, the apple pie a few posts down looks incredible. I mean, my mouth is seriously watering right now and demanding apple pie satisfaction.) (-:

I don't care about the lighting- that tofu meal looks seriously good! I love comfort food like that.

Oh, you may be right about big slices of tomato on pizza- they did slip around quite a bit!

And you're right about the sourdough starter- it's a little mixture of flour, water, and yeast. It "sleeps" in the fridge, and you "feed" it when you want to use it for something. When you feed it (with some flour and water), it bubbles up and puffs up- very interesting stuff. I think we have a new pet!

Everything looks incredible! Chocolate chip cookies! Cucumber sandwiches! Pasta! Mashed potatoes! Peanut butter pie! Apple pie! (P.S. your apple pie is a work of art, with all of those cute little crust-cutouts!)

Ok -- too many exclamation points, I think.

I can't imagine that any of those cookies made it to the freezer! I'd be sneaking them all the time...
