I made a lasagna using zucchini instead of pasta noodles. It would have helped to have a mandoline for this kind of thing. I mixed TVP with some pasta sauce as one of the layers, and some Tofutti cream cheese with soy milk and nutritional yeast for a cheesy layer, there's spinach, summer squash and vegan mozzarella and parmesan cheese. It turned out pretty well!
Then I made these cookies.. roughly based on the gigantoid peanut butter oatmeal recipe from VWaV. I traded out some oil for applesauce and a mini banana.. but I didn't measure anything. There some oil.. some applesauce, peanut butter, soymilk, banana.. and then all the regular stuff. They actually turned out good! Oh yeah I added chocolate chips.
Christine has some cookies in the oven right now. They're accidentally vegan.. she saw them on the food channel, something Giada made. Chocolate cookies with chocolate chips and pine nuts. If they're good maybe I'll put them up later hehe.

Judy - Yeah it was watery! It was the first time I tried it, I guess I didn't read up on it too much because I didn't know it would do that. Hmm... not quite sure how to fix that. What if I like.. baked the zuchinni stripes on a sheet first? I don't really know.

Awesome looking lasagna! I've never tried it with zucchini instead of noodles. I've seen this on a couple of other blogs too. And in a magazine. Sounds delish. I will sometimes use Italian herb tofu as a "cheez" layer in my lasagna. Gives it a great flavour.
