Split Pea Soup

I give you.. tonight's dinner!
It went like this.. saute 1/2 cup of each (chopped) onion, celery, and carrots in 1 tbsp of oil with a few spices of your choice. I used cumin, garlic powder, ginger and thyme. Then pour in 4 cups of water, 4 cups of veggie stock, and 1 pound of dried split peas. Bring to a boil, then turn it down and let it simmer for at least an hour.

I served it with rice, it was good!

mmm, that soup looks SO comforting - love it!! the rice makes for a tasty "finishing touch" on top of the soup!
