Cupcakes!

FINALLY putting VCTOtW to good use!
These are just regular banana cupcakes, fresh out of the oven:

Topped with chocolate buttercream frosting
and a few chopped walnuts:
The whole gang!

The only thing is.. marching band is over now.. I don't know who I baked these for. I'M certainly not going to eat them all. I just had some old bananas that I needed to use, and I STILL have 2 left! Yikes.

Your markcing band friends are going to miss you! You were always baking such great stuff for them. Wish I could take some of those banana cupcakes off your hands!

Great frosting job! I haven't tried the banana cupcakes yet (I made the rum raisin ones tonight) but yours look yummy. I agree that your bandmates are going to miss you and your treats!

Do you have access to a freezer you so you could freeze the bananas?

Bazu.. well there is a full size fridge with a freezer down in the kitchen, good idea. Can I still freeze the bananas if they're getting a little brown already? I have to unpeel them first right?

Make some banana bread. Or freeze them. My, you must be the most popular girl on your floor (or in the whole dorm).

I've heard you can freeze them even without peeling them. And it's actually better if they're overripe, because then when they freeze, and thaw, they are the perfect consistency for baking with. I peel and slice bananas (overripe) and freeze and then use them for smoothies and breakfast ice cream.

Tania, you don't have to peel the banana to freeze them first. I let mine get super brown (no yellow left) and then freeze them. They are good, very ripe. I take one out and use it for smoothies a lot (adds thickness) and all you need is a small sharp knife and just thinly slice the peel off. It is really easy once you get the hang of it, I can unpeel it in one roll now. Try it.

I peel my bananas, because I found it a pain in the butt to peel them when frozen. So frozen bananas can be used in baking? I was never sure, but I never have bananas when I need them, just frozen ones.

These cupcakes look awesome. I definitely recommend freezing the bananas peeled - you can even eat them right out of the freezer for a cold and creamy snack.

I sure wish someone had baked vegan treats when I was in band...
