Muffins!

Yesterday I made these blueberry muffins to take to church today. They were perfect! I filled the cups up pretty high so they would have good tops like bakery muffins. Success!

Then we went on a walk and Chris just HAD to pose like this for the picture. Kohl's ad?

Well that's all for now! Back to school tomorrow.

Burger Night!

Tonight was burger night! Boca burgers with the works, roasted potatoes, and broccoli!

Brother Ben came over for dinner, as is the weekly ritual, he liked it! And then he let me take a picture of him with my new camera... thinking.

Spring Break

Well.. today marks the end of spring break. Wait.. spring break? What is that!! I've been working at Circuit City and observing/teaching at a school for my field experience. My break looked like this..

Friday - work
Saturday - work
Sunday - work
Monday - field, work
Tuesday - work, dinner with the family!
Wednesday - field, work
Thursday - BOUGHT A NEW CAMERA! PUT A DEPOSIT DOWN ON AN APARTMENT WITH CHRIS!
Friday - work
Saturday - taught a sax lesson, work
Today - audition for next semester's ensembles, work
Then back to school!

Ugh. But as you can see.. Thursday was the most exciting day! No work, and I bought an extremely expensive camera. And me and Chris settled on an apartment! Woohoo.

In food news.. I made these cookies to take to work yesterday. Green for St. Patrick's day. Haven't gotten the hang of this camera yet but here's a picture, heh.

Then today I made roasted red pepper hummus using the basic hummus recipe from Veganomicon! Good stuff.

Tofu Stir Fry

So my little bro Ben is still coming over for dinner. On Wednesday this week it was just me and him, because Chris was too nervous to eat before his vocal jazz concert haha. We had tofu stir fry with rice.

Spinach Zucchini Soup

Last night Chris and I made this for dinner. Spinach and zucchini soup!

I'm not on my own computer right now, so I'll put a link to the recipe later.. I have it saved. It's got zucchini, fresh spinach, potatoes, onions, and cilantro. And I got to use my immersion blender! We had it with rolls-in-a-can, heh.

I made these the other day.. courtesy of Paula Deen, haha. They really are great, and I never found cookies that difficult to veganize if you wanted to.

I took them to work at my new job (Circuit City) and they were gone in less than an hour! Heck yeah.
