BEST Banana Bread!

I'm sorry.. this recipe isn't vegan.. but there's a reason for that. And somebody NEEDS to veganize this!

The reason I made this is because it's my boyfriend's favorite banana bread (seriously.. he loves it.. a lot) so I emailed his mom and got the recipe for it. I made it for him for Valentines Day (shhh!) When his mom made it over Christmas break he made me taste it.. I just had a little bit, it really is AWESOME. If anybody out there makes a vegan version of this.. let me know how it turns out! I will do it eventually, but I wanted to give him the real thing.


Sour Cream Banana Bread

1/4 cup sugar
1 tsp cinnamon

3/4 cup margarine
3 cups sugar
3 eggs
6 very ripe bananas, mashed
1 (16 oz) container sour cream
2 tsp vanilla extract
2 tsp cinnamon
1/2 tsp salt
3 tsp baking soda
4 1/2 cups AP flour

Preheat oven to 300ยบ.. Grease the four 7"x3" loaf pans (I used three regular sized.. I think it was like 9"x5") and dust with the cinnamon/sugar mixture.

Cream the margarine and sugar.. add the eggs, bananas, sour cream and vanilla. Mix in everything else. Divide into pans, not more than 3/4 of the way! Bake until a toothpick comes out clean, a little more than an hour.

I'd be interested to see how this goes with vegan sour cream and maybe flax eggs or something. If you won't.. I will!

Tania, you can sub ground flax seed and water for the eggs. Or add more banana. Or add some baking powder with the soda and that can work too.

For the sour cream, there is pre-made vegan sour cream Tofutti and another one I can't remember. I think you can use tofu and I'm sure the cookbooks you use have info on that in the back of the books... I think you can use Le Dolce Vegan (that's the one you have right?).

Does this help any? If not, I have my awesome own recipe for banana bread. I think it's under the Feb 06 archive, but if not, just google for it.

Also, how super-sweet of you to go these lengths to make a vegan version of the exact one he loves!

banana bread is pretty easy to veganize, since it's supposed to be a little bit dense and moist anyway.
it is sweet that you made your bf's favorite treat- he better appreciate you!

First of all, WOW that's a lot of banana bread! I'm sure your boyfriend will be much appreciative. I also agree with the above comments, the eggs should be easy to replace--I'd just throw in some more bananas, or maybe some applesauce. For the sour cream, maybe just sour some silken tofu with a little lemon juice or something? I hope you try it soon--bananas never last long enough around here to get overripe, so it's pretty much hopeless for me!

Ok, I thought about this some more... silken tofu instead of eggs (1/4 cup of blended tofu per egg) good for moisture. Vegan sour cream instead of sour cream. And maybe a teaspoon of lemon juice or vinegar just to enhance the sour cream tang? I'm dying to know how you veganize this!
