My own creation!
I used the dry ingredients from the "Yeast-Free Pizza Crust" in LDV, and added half an avocado (all mashed up) and about 1/4 cup of soymilk.. to make a dough kind of thing.
The filling is the "mozzarella" and "pepperonis" leftover from the pizza the other night, along with some fresh spinach. Obviously I need more filling next time.
I wrapped these up and froze them for meals later.. my semester is so crazy I'm gone from 7:30-4 most days.. luckily the music building has a microwave.. mmm hot pockets for lunch!

These do look really good, especially for your busy schedule. This gives me flashbacks... this summer, I was grading AP exams, and one person went on and on about his love of hot pockets instead of answering the actual question... weird!

That looks insanely good--and convenient for reheating.
About gluten and cold water in reference to your question on my blog. With veggie burgers if the burger mix is warm and then the gluten is mixed in the gluten will get stringy and will not hold the burger together. With the gluten cutlets the water placed with the gluten flour is COLD, however the cooking broth is warm (since the cutlets are already "together" this is okay.... they are just cooking now).
That is my 100% guess.
