I'm Still Here!

Gah, this is terrible. People weren't washing their dishes after they used the dorm kitchen.. so they've stopped letting people use it! Good thing the school year is almost over. I'm moving back home on May 11th.. so I may not be doing a lot of cooking/baking until then. :(

Then on June 1st I move into MY APARTMENT!! Ahhhh. I will be in the kitchen all the time! Haha. I need to get all my own cooking/baking equipment... Well that's all for now. Sorry I have no food to post. *cry*

Home Again.. Cookies!

Home again this weekend.. I made some cookies today! Double Chocolate Almond Explosion Cookies from Vive le Vegan! I subbed brown rice syrup in for the maple syrup (because I'm trying to get rid of mine.. I have it and don't use it a lot..) and then I thought maybe it would be too thick so I put in soy milk for half of the oil. Oh and also.. I just mixed in 1/3 cup of chocolate chips and 1/3 cup of sliced almonds instead of mixing half in and half on top. I think they turned out good! My Mom said they were great!


This picture is kind of funny, I smeared a chocolate chip on the top cookie. Whoops.

Huge Cookies!

I'm home for a few days.. first thing I did.. BAKE! Massive chocolate chip / peanut butter / oat cookies! They're awesome! I'll let you all in on this..

1 cup AP flour
1 cup oats
1/2 cup brown sugar
1/2 cup granulated sugar
1/3 cup chocolate chips
1/2 tsp baking soda
1/2 tsp salt
1/3 cup water
1/3 cup peanut butter
2 tablespoons oil
2 tsp vanilla

Combine the red in a large bowl. In a small bowl, whisk the blue until mixed, then add to the red! You can stir if you want but I just mixed it up with my hands.. Then shape them into cookies (they won't flatten out while baking) and bake at 400ยบ for about 11 minutes!

They'll be squishy when they come out but trust me they'll harden up!

Chocolate & Peanut Butter..

A match made in heaven! I first saw this in a post on The PPK forums. The recipe is from Squirrel's Vegan Kitchen. Huuuuge hit with the family, the boy and his apartment-mates! I even had a few myself.. they're really awesome! I suggest these to everyone.


I think my chocolate dough was a liiiitle too moist. And I skipped out on chocolate chips in the peanut butter filling. Oh well.. they're great!
