Hey guys! I just wanted to let you know I'm still here. I've been suuuper busy lately. I just got back yesterday from Nebraska, I went for pow-wow (yessss I'm Native American) and to visit family, so maybe I will show you guys some pictures from that soon.

Dinner and Dessert!
I made a lasagna using zucchini instead of pasta noodles. It would have helped to have a mandoline for this kind of thing. I mixed TVP with some pasta sauce as one of the layers, and some Tofutti cream cheese with soy milk and nutritional yeast for a cheesy layer, there's spinach, summer squash and vegan mozzarella and parmesan cheese. It turned out pretty well!
Then I made these cookies.. roughly based on the gigantoid peanut butter oatmeal recipe from VWaV. I traded out some oil for applesauce and a mini banana.. but I didn't measure anything. There some oil.. some applesauce, peanut butter, soymilk, banana.. and then all the regular stuff. They actually turned out good! Oh yeah I added chocolate chips.
Christine has some cookies in the oven right now. They're accidentally vegan.. she saw them on the food channel, something Giada made. Chocolate cookies with chocolate chips and pine nuts. If they're good maybe I'll put them up later hehe.

Garden Veggies and Juice
A big zucchini from Mom's garden. Anyody got any good zucchini recipes?
I used it in soup tonight!
Oh! I went home yesterday to do some laundry.. and while I was there I swiped the juicer that wasn't getting any use. This has carrots, a beet and half an apple.
Thennnn I used some of a cucumber from Mom's garden, Tofutti cream cheese and some tomato slices on a mini bagel for lunch tomorrow!
Now I'm watching Little Miss Sunshine.. not bad so far, but it's only been 10 minutes.
Oh man, there's no baking in this post...

Blogiversary!
This week marks my 1-year veganniversary and blogiversary! Yep, I've been blogging it since the very beginning.. I feel like I've come a long way! Lots of reading and learning, and I think I've been making better food.
On to foods.. this isn't much for the big event, but the other day I made this hummus tortilla pizza.
And these are Garrick's chocolate chip cookies from the PPK forums. I like this recipe a lot.

Apartment Warming Party!
So yesterday.. was the most hectic day ever. I enlisted the help of Christine and my friends Courtney and Ben to get set up for the party. We spent most of the day in the kitchen, but Courtney and I spent some time in my room because she was on goody bag duty, and I really wanted to get the curtains finished for the living room and kitchen.

S'mores Cupcakes
Tonight I tried the s'mores cupcakes from VCTOW.. I sort of messed up the frosting. I tried to halve it.. but halfway through I forgot what I was doing and added the full amount of soymilk. So I wasn't able to pipe it, but Christine and I just spooned it onto the cupcakes.. and then topped them with chocolate shavings and graham cracker crumbs.
These were actually a request from my boss' son.. I'm taking them in to work tomorrow. I had one.. they are quite reminiscent of s'mores!

Muffins and Tacos!
Mom bought us some blueberries last weekend when we were home, so I made muffins. I used the recipe for the apple-pie crumb-cake muffins from VWaV only I switched out the apple for blueberries. I halved it and made 12 mini-muffins. They turned out great!
Oh and this morning I made smoothies for us. Here is mine perched at my work station..yes, I work on the floor of my boss' kid's bedroom.. it was blueberries, banana, soy yogurt and soymilk.. oh and some ice.
And tonight we just had these taco salad bowls for dinner. We used some of Christine's pottery to shape the tortilla bowls in the oven, and here's all the toppings.
I had mine with a Boca burger..
And Christine had hers with a Boca chik'n patty. Fantastic!
